It's June and there are lots and lots of beautiful and delicious GREENS to be had on the farm. This is a quick lunch I whipped up in between harvesting and prepping for the days' farm stand. I want to share this goodness with you and give you the recipe to make your own and source locally from mine or others farms this season!
Spring Farm Fresh Salad
1 handful of salad mix
2 leaves of red head lettuce, torn into bite sizes
1/2 apple, cubed
1/2 avocado, cubed
1 Tbl pistachios
1 tsp sunflower seeds
1 tsp chive flowers
1/2 tsp thyme
1 TBL balsamic vinaigrette
Toss to mix salad mix and red lettuce leaves till evenly spread.
Top with apple, avocado, pistachios, sunflower seeds, chive flowers, thyme, and balsamic vinaigrette.
